Mmmm there's nothing quite like this Amazing Ham Fried Rice! Filled with succulent ham, tender bites of egg, hearty corn and peas, and rich soy sauce, it is just bursting with great flavors! What better way to use leftover rice? It's golden-brown and such a joy to eat, you'll have trouble eating rice when it's first made... you'll want to save it to make more fried rice!
Ingredients
- 3 tablespoons grapeseed oil, divided
- 3 eggs, beaten
- 6 cups jasmine rice, cooked, preferably day-old
- 3 tablespoons soy sauce
- 2 teaspoons sesame oil
- salt, to taste
- black pepper, to taste
- 1 cup ham, cooked and diced
- 3/4 cup frozen corn, optional
- 1/3 cup frozen peas
- 2 tablespoons unsalted butter
- 2 green onions, thinly sliced
Directions
Step 1 -In a wok or a large skillet over medium heat, add 1 tablespoon of the grapeseed oil and heat while swirling the pan.
Step 2 -Add the beaten eggs to the hot oil and cook undisturbed until they are just set, about 2-3 minutes.
Step 3 -Keeping the eggs together as a single patty, flip and cook the reverse side until it is cooked through, about 1 minute.
Step 4 -Transfer the egg patty from the skillet to a plate to cool slightly.
Step 5 -Cut the egg patty into bite-sized pieces.
Step 6 -In the same wok over medium heat, add the remaining grapeseed oil.
Step 7 -Add the rice and cook, while stirring, until the rice is coated in the hot oil, about 2 minutes.
Step 8 -Add the soy sauce and the sesame oil to the rice and stir to combine.
Step 9 -Season the rice mixture with the salt and the black pepper.
Step 10 -Increase the heat to medium-high.
Step 11 -Cook the rice mixture, while stirring occasionally, until the rice is completely heated through, about 5-8 minutes.
Step 12 -Add the ham, the corn, and the peas to the rice mixture and cook, while stirring occasionally, until warmed through, about 3-4 minutes.
Step 13 -Reduce the heat to medium-low.
Step 14 -Add the butter to the rice mixture and cook, while stirring to combine, until melted and thoroughly combined.
Step 15 -Add the egg pieces and the green onions to the rice mixture and stir gently to combine.
Step 16 -Taste the fried rice for seasoning and add more of the salt and more of the black pepper, as needed.
Step 17 -Serve immediately.
