Bacon Mango Fried Rice is fried rice like you’ve never tasted before! This scrumptious dish puts an exciting twist on classic fried rice, with the sweet, tart, tropical fruit paired with crispy fatty bacon in a fluffy bed of fried rice. This dish is easy and quick to make, and it’s both hearty and refreshing. You’ll gobble up this Bacon Mango Fried Rice in no time!
Ingredients
- 5 strips bacon, thick-cut and chopped
- 1 mango, peeled and diced
- 4 cups white rice, cooked and day-old
- chives, optional, to taste, chopped, for garnish
Directions
Step 1 -In a large skillet over medium heat, saute the chopped bacon until nearly crisp, about 5-7 minutes.
Step 2 -Transfer the bacon to a paper-towel-lined plate.
Step 3 -Remove all but 2 tablespoons of fat in the pan.
Step 4 -Add the mango to the skillet and saute until caramelized, about 2-3 minutes.
Step 5 -Stir in the rice and the bacon until well combined and warm.
Step 6 -Serve with the chives.
