Ingredients
- For the chicken:
- 1 pound chicken breasts, boneless and skinless, cut into 1-inch chunks
- kosher salt, to taste
- freshly ground black pepper, to taste
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- For the honey garlic sauce:
- 1/3 cup honey
- 4 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sriracha, optional
- 1 tablespoon cornstarch
- 1/3 cup water
- rice, optional, to taste, cooked, for serving
- 2 green onions, thinly sliced
- 2 teaspoons sesame seeds
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Lightly oil a 9×13 baking dish.
Step 3 -Season the chicken pieces with the salt and the pepper.
Step 4 -Working in batches, dip the chicken pieces into the eggs and then dredge them in the panko, pressing to coat.
Step 5 -Add the chicken pieces to the prepared baking dish and bake until they reach an internal temperature of 165 degrees F and are golden-brown and crisp, about 15-20 minutes.
Step 6 -In a medium saucepan over medium-high heat, combine the honey, the garlic, the soy sauce, and the sriracha.
Step 7 -In a small bowl, combine the cornstarch and the water; stir the cornstarch mixture into the sauce mixture until it thickens, about 1-2 minutes.
Step 8 -Stir the cooked chicken into the sauce and gently toss to combine.
Step 9 -Serve the chicken over the rice, garnished with the green onions and the sesame seeds.
