Baked Salsa Verde Chicken is a ridiculously easy and ridiculously delicious Tex-Mex-inspired chicken dish that will have everyone else green with envy! The chicken has bold, zesty seasoning, then is baked while coated in vibrant, spicy salsa verde so the flavors soak into the poultry! The result is savory, juicy, memorable goodness! With melted cheese on top, Baked Salsa Verde Chicken beats fancy chicken dishes any day of the week!
Ingredients
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 3/4 teaspoon kosher salt
- 1/2 teaspoon smoked paprika
- 1 tablespoon olive oil
- 4 chicken breasts, boneless and skinless
- 1 1/2 cups Monterey Jack cheese, shredded
- 1 (16-ounce) jar salsa verde
- cilantro, optional, to taste, chopped, for garnish
- green onions, optional, to taste, chopped, for garnish
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Grease a 9x13-inch baking dish.
Step 3 -In a small bowl, add the chili powder, the cumin, the salt, and the smoked paprika and whisk to combine.
Step 4 -Rub the seasoning mixture and the olive oil over the chicken breasts, coating all sides.
Step 5 -Place the chicken breasts in the prepared baking dish in a single layer.
Step 6 -Add the salsa evenly over the chicken breasts.
Step 7 -Bake until the chicken breasts are almost cooked through, about 15-20 minutes.
Step 8 -Sprinkle the Monterey Jack cheese over the chicken breasts, then bake until the cheese has melted and the chicken breasts reach an internal temperature of 165 degrees F, about 5-10 minutes.
Step 9 -Transfer the chicken breasts to a cutting board and cut them into slices.
Step 10 -Top the chicken slices with the salsa verde sauce.
Step 11 -Garnish with the cilantro and the green onions and serve.
