Ingredients
- For the salmon:
- 4 salmon fillets, skinless
- 2 tablespoons olive oil, divided
- 2 tablespoons lemon juice
- salt, to taste
- black pepper, to taste
- 4 ounces frozen spinach, thawed and dried
- 4 ounces cream cheese, room temperature
- 1/4 cup parmesan cheese, finely grated
- 2 teaspoons garlic, minced
- 1 tablespoon unsalted butter
- For the optional garlic butter:
- 1 tablespoon unsalted butter
- 1 tablespoon garlic, minced
- 1 tablespoon lemon juice
Directions
Step 1 -Season both sides of the salmon fillets with 1 tablespoon of the olive oil, 2 tablespoons of the lemon juice, the salt, and the black pepper.
Step 2 -Use a sharp knife to cut a pocket along the side of the salmon fillets about 3/4 of the way through, being careful not to cut all the way through.
Step 3 -In a large bowl, add the spinach, the cream cheese, the parmesan cheese, 2 teaspoons of the garlic, the salt, and the black pepper and mix well.
Step 4 -Fill the pockets of the salmon fillets with about 1-2 tablespoons of the spinach mixture and spread it evenly with the back of a spoon.
Step 5 -In a large skillet over medium-high heat, add 1 tablespoon of the butter and the remaining olive oil.
Step 6 -Add the filled salmon fillets and cook until they are golden and reach an internal temperature between 120-125 degrees F, about 6-7 minutes per side.
Step 7 -Transfer the salmon from the heat and keep warm.
Step 8 -In the same large skillet over medium-high heat, melt the remaining butter in the juices from the salmon.
Step 9 -Add the remaining garlic and the remaining lemon juice to the melted butter mixture and cook, stirring constantly, until it is fragrant, about 30 seconds.
Step 10 -Serve the salmon fillets with the garlic butter.
