Take a chance on the perfectly packed goodness of this cheesy ground beef and cauliflower dish that brings you a monopoly of flavors. No matter how many turns you take, the house rules will be that you came to play, you got game, and that this is the best meal yet! So, pass "go" and get this Beefy Cauliflower Casserole on the table tonight!
Ingredients
- 1 tablespoon extra-virgin olive oil
- 1/2 cup onion, chopped
- 1 medium green bell pepper, chopped
- 1 pound lean ground beef
- 3 cups cauliflower florets, cut into bite-size pieces
- 3 cloves garlic, minced
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon ground chipotle
- 1 (15-ounce) can no-salt-added petite-diced tomatoes
- 2 cups extra-sharp cheddar cheese, shredded
- 1/3 cup pickled jalapeños, sliced
Directions
Step 1 -Place an oven rack in the upper third position.
Step 2 -Preheat the oven broiler to high.
Step 3 -In a large oven-safe skillet, heat the oil over medium heat.
Step 4 -Add the onion and the bell pepper to the skillet and cook, while stirring, until they have softened, about 5 minutes.
Step 5 -Add the ground beef and the cauliflower to the pepper mixture and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes.
Step 6 -Stir the garlic, the chili powder, the cumin, the oregano, the salt, and the chipotle into the beef mixture and cook until the spices are fragrant, about 1 minute.
Step 7 -Add the tomatoes and their juices to the beef mixture, bring to a simmer, and cook, stirring occasionally, until the liquid has reduced and the cauliflower is tender, about 3 minutes.
Step 8 -Transfer the beef mixture from the heat and sprinkle with the cheese.
Step 9 -Top the cheese with the jalapeños.
Step 10 -Place the beef mixture in the oven and broil until the cheese has melted and browned in spots, about 2-3 minutes.
Step 11 -Serve.
