The gym coach at the local school isn't like every gym coach. Sure, he's big and strong and he loves sports, but this guy's got a huge soft spot for his kiddos. He loves encouraging them to reach for the stars and believes in them like no one else does. His students have the same kind of love and respect for him, so they wanted to create Bruno's Brownies as a way to celebrate the impact he's made over the years. When he was presented with these rich, gooey, chocolatey squares, he just about cried. And then when they told him they stirred in some bananas, he laughed because his affection for that beloved fruit is known all across campus. Being any kind of teacher is hard work, but the kids make it worth it... especially when they make sweet treats like Bruno's Brownies!
Ingredients
- 3/4 cup granulated sugar
- 1/2 cup canola oil
- 1/4 cup light brown sugar, packed
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 3/4 cup white whole-wheat flour
- 1/2 teaspoon salt
- 2 large bananas, very ripe
- 1/2 teaspoon baking powder
- 1/2 cup unsweetened cocoa powder
- 1/2 cup semisweet chocolate chips
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat an 8-inch square baking dish with cooking spray.
Step 3 -In a large bowl, add the granulated sugar, the oil, the brown sugar, the eggs, and the vanilla and whisk to combine.
Step 4 -Stir the flour and the salt into the batter mixture.
Step 5 -In a medium bowl, add the bananas and mash them.
Step 6 -Stir the baking powder into the mashed bananas.
Step 7 -Add the banana mixture to the batter mixture and stir until it is just combined.
Step 8 -Pour 1/2 of the banana batter back into the medium bowl.
Step 9 -Add the cocoa powder and the chocolate chips to the remaining batter in the large bowl and stir until it is just combined.
Step 10 -Evenly add about 1/2 of the chocolate batter by the spoonful to the bottom of the prepared baking dish.
Step 11 -Pour the reserved banana batter on top of the chocolate batter in the baking dish, then evenly dollop the remaining chocolate batter on top.
Step 12 -Draw a butter knife through the batters to create a swirl design.
Step 13 -Bake the brownies until a toothpick inserted into the center comes out clean, about 40-45 minutes.
Step 14 -Transfer the baking dish to a wire rack and let it cool.
Step 15 -Cut the brownies into squares and serve.
