Cajun Shrimp & Sausage Pasta, serves up a restaurant-quality pasta dish that befits the festive flavors of New Orleans! This delectable dish is a delicious combination of al dente penne, flavorful shrimp, andouille sausage, and veggies like onion, red peppers, and more. It’s spicy, garlicky, savory, and sprinkled with romano cheese for additional tastiness. Cajun Shrimp & Pasta is perfect for any night of the week when you’re craving a little cajun flavor since it only takes 40 minutes to make.
Ingredients
- 1/2 pound shrimp, large, raw, peeled, deveined, and tail removed
- 3 tablespoons plus 1 teaspoon cajun seasoning, divided
- 5 tablespoons olive oil, divided
- 4 ounces andouille sausage
- 1/2 yellow onion, diced
- 1/2 red peppers, cut into 1-inch chunks
- 4 ounces mushrooms
- 2 cloves garlic, minced
- 1/2 cup tomatoes, crushed
- 1/2 cup chicken broth
- 2/3 cup milk
- 3 tablespoons butter
- 1 tablespoon cornstarch
- 3 cups penne, cooked
- 3 2/5 cup romano, optional, for serving
- 2-3 green onions, diced, optional, for serving
Directions
Step 1 -Toss the shrimp in a bowl with the 3 tablespoons of the cajun seasoning.
Step 2 -Heat 2 tablespoons of the olive oil over medium-high heat in a large skillet.
Step 3 -Once heated, cook the shrimp until pink, about 2 minutes per side.
Step 4 -Transfer the shrimp to a plate and set it aside.
Step 5 -In the same skillet, cook the sausage until heated through, about 3 minutes.
Step 6 -Transfer the sausage to a plate and set it aside.
Step 7 -In the same skillet, heat the remaining 3 tablespoons of the oil.
Step 8 -Add the onion, the red pepper, the mushrooms, and the remaining 1 teaspoon of the cajun seasoning.
Step 9 -Stir and cook until the vegetables are tender, about 3-5 minutes.
Step 10 -Add the garlic to the skillet and allow to cook, stirring constantly, until fragrant, about 30 seconds.
Step 11 -Add in the tomatoes, the broth, the milk, and the butter.
Step 12 -Bring the skillet mixture to a simmer.
Step 13 -Add in the corn starch, whisking constantly to avoid clumps.
Step 14 -Scrape the pan to break up and incorporate any brown bits on the bottom of the skillet.
Step 15 -Simmer until the sauce thickens, about 5 minutes.
Step 16 -Add the penne, the shrimp, and the sausage to the skillet.
Step 17 -Toss together and allow to heat through.
Step 18 -Garnish with the cheese and green onions, and serve immediately!
