Broccolini® might seem a little snobby on the surface, but they're an enjoyable crisp and flavorful vegetable when prepared right. And as Cheesy Roasted Broccolini demonstrates, it's actually fairly easy to make! Seasoned with salt and pepper and drizzled with olive oil, the natural garden-fresh flavor of the Broccolini comes to the forefront, accented by sharp cheddar and bright lemon juice. Nothing to it! Cheesy Roasted Broccolini can be made in less than half an hour and the results provide a five-star experience!
Ingredients
- 1 1/2 pounds Broccolini
- olive oil, to taste
- kosher salt, to taste
- freshly ground black pepper, to taste
- 6 ounces sharp aged white cheddar
- 1/2 lemon, juiced
- lemon wedges, to taste, for garnish
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Remove and discard the bottom halves of the Broccolini stems.
Step 3 -Cut the remaining Broccolini stems in half or quarters lengthwise; do not cut the florets, instead pull them apart.
Step 4 -Place the Broccolini on a sheet pan.
Step 5 -Drizzle the olive oil over the Broccolini.
Step 6 -Season the Broccolini with the salt and the pepper and toss lightly to coat.
Step 7 -Spread the Broccolini into a single layer on the sheet pan.
Step 8 -Roast the Broccolini, tossing them once with a metal spatula, until crisp-tender, about 8-10 minutes.
Step 9 -Slice the cheddar into 1/4-inch-thick slices and then break those slices into large crumbles.
Step 10 -Sprinkle the cheese over the Broccolini and bake just until melted, about 4 minutes.
Step 11 -Squeeze the lemon juice over the Broccolini.
Step 12 -Taste the Broccolini for seasoning, adjusting with more of the salt and the pepper as needed.
Step 13 -Serve hot, garnished with the lemon wedges.
