Why are you waiting 30 minutes for Chinese takeout? You can make Chicken Fried Brown Rice easily in your own kitchen in 20 minutes or less. That’s right, you can have the tangy, savory, salty favorite at its absolute freshest, steaming hot from your skillet. Chicken Fried Brown Rice also brings nutty, earthy flavors and fresh vegetables to pair with the tender chicken. Put down the takeout menu because you can treat your taste buds even better!
Ingredients
- 2 tablespoons vegetable oil, divided
- 8 ounces chicken breasts, boneless, skinless, and sliced into strips
- 1/2 cup large sweet red peppers, chopped
- 1/2 cup green onions, chopped
- 3 cups brown rice, cooked
- 2 tablespoons light soy sauce
- 1 tablespoon rice wine vinegar
- 1 cup frozen peas, thawed
Directions
Step 1 -Add 1 tablespoon of oil to a large skillet and warm over medium heat.
Step 2 -Once the oil is hot, add the chicken, red pepper, and green onion to the skillet.
Step 3 -Cook until the chicken is cooked through, about 5-7 minutes.
Step 4 -Remove the chicken from the skillet and set aside.
Step 5 -With the skillet still on medium heat, add the remaining oil.
Step 6 -Add the cooked rice and cook for 2-4 minutes, stirring often to prevent sticking and burning.
Step 7 -Combine the soy sauce, vinegar, and peas into your skillet with the fried rice; cook for 1 minute.
Step 8 -Stir in the chicken and vegetable mixture. Serve hot.
