The rustic charm of Cobbler Bars is only matched by its delicious sweetness! The brown-sugar-sweet crust would be tasty enough on its own, but then it's filled with juicy, tart, and vibrant blackberries and floral peaches! On top, crunchy, buttery, and candy-like pecans! Mmmm, Cobbler Bars are a home-baked treat that really warms the soul!
Ingredients
- 3 1/4 cups all-purpose flour, divided, plus more, to taste, for dusting the pan
- 1 cup butter, softened
- 1 cup light brown sugar, firmly packed
- 1 1/2 cups granulated sugar, divided
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 teaspoon baking powder
- 3/4 teaspoon table salt
- 3 (6-ounce) packages fresh blackberries
- 4 cups firm, ripe peaches, peeled and sliced
- 3 tablespoons bourbon
- 1 cup roasted and glazed pecans, such as Diamond of California® Glazed Pecans
- whipped cream, optional, to taste, store-bought or homemade, for serving
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9x13-inch pan and then, using the extra flour, lightly dust the greased pan.
Step 3 -In a large bowl, add the butter, the light brown sugar, and 1 cup of the granulated sugar and beat using an electric mixer until creamy.
Step 4 -Add the eggs, one at a time, and beat just until blended after each addition.
Step 5 -Stir in the vanilla.
Step 6 -In a separate bowl, add the baking powder, the salt, and 3 cups of the flour and stir to combine.
Step 7 -Gradually add the flour mixture to the butter mixture and beat just until blended.
Step 8 -Spread 3/4 of the batter into the prepared pan.
Step 9 -Sprinkle the batter layer with the blackberries.
Step 10 -In a medium bowl, add the remaining granulated sugar and the remaining 1/4 cup of the flour and stir to combine.
Step 11 -Add the peaches and the bourbon to the flour-sugar mixture and stir to coat.
Step 12 -Spoon the peach mixture over the blackberry layer.
Step 13 -Stir the pecans into the remaining batter.
Step 14 -Dollop the batter over the peach mixture.
Step 15 -Bake until golden and bubbly, about 1 hour.
Step 16 -Allow the bars to cool completely on a wire rack, about 1 hour.
Step 17 -Cut into serving-size bars and serve with the whipped cream.
