Coconut Rice is a delicious way to mix up your rice routine. Infused with the rich and tropical flavors of coconut, it’s a perfect accompaniment to fish and Thai-inspired dishes with thick luscious sauces. Coconut Rice is even delicious paired with fruit for a bright and tart dessert. This is a side dish that really brings you to sparkling seas!
Ingredients
- 1 (13.5-ounce) can coconut milk
- 1 1/2 cups coconut water
- salt, to taste
- 2 cups jasmine rice
Directions
Step 1 -In a medium non-stick saucepan over medium-high heat, bring the coconut milk and the coconut water to a boil.
Step 2 -Season the milk mixture with the salt.
Step 3 -Add the rice and lower the heat to bring the mixture to a simmer.
Step 4 -Simmer the rice uncovered until the liquid has been absorbed, about 17-20 minutes.
Step 5 -Remove from the heat and let the rice rest, covered, for about 15 minutes.
Step 6 -Fluff with a fork and serve.
