While you're out hustling and bustling, this savory chicken and veggie delight is soaking up all the satisfying flavors in your slow cooker. That way when you come home, you can kick off your shoes and actually relax. Retreat into dinnertime with Cozy Chicken & Veggies. The worries of the world can wait until tomorrow!
Ingredients
- For the chicken and the veggies:
- 2 teaspoons paprika
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/4 teaspoon cayenne pepper
- 2 (1.5-pound) chicken breasts, bone-in and skin-on, skin removed and halved
- 1/2 pound baby portobello mushrooms, quartered
- 1 medium red bell pepper, chopped
- 1 medium onion, chopped
- 1 (14-ounce) can water-packed artichoke hearts, rinsed and drained
- 1 1/2 cups chardonnay
- 1 (6-ounce) can tomato paste
- 3 cloves garlic, minced
- 2 tablespoons fresh thyme, minced, or 2 teaspoons dried thyme
- For serving:
- fettuccine noodles, to taste, cooked and warm
- 1/4 cup fresh parsley, minced
- Romano cheese, to taste, grated
Directions
Step 1 -In a small bowl, add the paprika, the salt, the pepper, and the cayenne and mix to combine.
Step 2 -Sprinkle the seasoning mixture evenly over the chicken halves.
Step 3 -In a 5-quart slow cooker, place the seasoned chicken halves, the mushrooms, the red bell peppers, the onions, and the artichokes.
Step 4 -In a second small bowl, add the chardonnay, the tomato paste, the garlic, and the thyme and mix to combine.
Step 5 -Pour the sauce over the vegetables.
Step 6 -Cover the slow cooker and cook the chicken and the veggies on low heat until the meat reaches an internal temperature of 165 degrees F and is tender, about 5-6 hours.
Step 7 -Add the fettuccine to the serving plates and top with the chicken and the veggies.
Step 8 -Garnish the chicken and the veggies with the parsley and the cheese and serve.
