Get ready to dunk your saltiest tortilla chip into a flavor explosion that we like to call Creamy Chorizo Dip! It brings you creamy cheese, spicy chorizo, and zesty tomatoes to make the perfect landing space for whatever you're wanting to smother it with. This easy-to-make dip comes together in minutes and is a highly requested party appetizer. So, make sure you make plenty of Creamy Chorizo Dip because it will definitely disappear in no time!
Ingredients
- 1 tablespoon olive oil
- 8 ounces fresh chorizo or spicy sausage, casing removed
- 2 cloves garlic, minced
- 1/2 sweet onion, diced
- 1 poblano pepper, minced
- 2 tablespoons all-purpose flour
- 1 1/4 cups whole milk
- 1 Roma tomato, diced
- 1 (8-ounce) package Monterey Jack cheese, shredded
- 1 (8-ounce package) Pepper Jack cheese, shredded
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1 cup fresh cilantro leaves, chopped, divided
- 1/4 cup pickled jalapeño peppers
Directions
Step 1 - Arrange an oven rack 3 inches from the broiler.
Step 2 -Preheat the oven to broil on high heat.
Step 3 -Heat the olive oil in a large oven-proof skillet over medium heat.
Step 4 -Add the chorizo to the oil and cook, while crumbling, until it is no longer pink, about 5-8 minutes.
Step 5 -Drain the excess fat and transfer the meat to a paper-towel-lined plate.
Step 6 -Add the garlic, the onion, and the pepper to the skillet and cook, stirring frequently, until the onions are translucent, about 3-4 minutes.
Step 7 -Whisk the flour into the onion mixture until it has lightly browned, about 1 minute.
Step 8 -Reduce the heat to low, gradually whisk the milk and the tomato into the veggie mixture, and cook, whisking constantly, until it thickens, about 4-5 minutes.
Step 9 -Transfer the sauce mixture from the heat and gradually stir in the Monterey Jack cheese and the Pepper Jack cheese until it is smooth.
Step 10 -Season the cheese mixture with the salt and the pepper.
Step 11 -Stir 1/2 of the chorizo and 1/2 cup of the cilantro into the cheese mixture.
Step 12 -Add the remaining chorizo and the remaining cilantro and garnish with the pickled jalapeño peppers.
Step 13 -Broil the cheese dip until it is golden-brown, about 2-3 minutes.
Step 14 -Serve.
