  • 2 cups taco sauce
  • 1/2 cup water
  • 1 (15-ounce) can diced tomatoes, undrained
  • 1 tablespoon taco seasoning
  • 1 cup long-grain white rice
  • 24 bite-sized frozen turkey meatballs, thawed
  • 1 (4-ounce) cup cheddar cheese, shredded and divided
  • green onion, optional, sliced, for topping
  • avocado, optional, diced, for topping
  • tomatoes, optional, sliced, for topping
  • olives, optional, sliced, for topping

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Grease a 9x13-inch baking dish.

Step 3 -Stir the taco sauce, water, tomatoes, taco seasoning, and rice together in the prepared baking dish.

Step 4 -Add the meatballs and 1/2 cup cheese, stirring to combine.

Step 5 -Cover the baking dish tightly with foil.

Step 6 -Bake until the rice is tender, about 45-60 minutes.

Step 7 -About 5 minutes before the dish finishes cooking, remove the dish from the oven, uncover it, and sprinkle it with the remaining cheese.

Step 8 -Return the dish to the oven and bake uncovered until the cheese is melted, for about 5 minutes.

Step 9 -Garnish with your favorite toppings and serve.
