Easy Baked Cod does exactly that, bringing the crunchy with an herby breadcrumb coating and then baked to juicy and tender perfection. This is the kind of meal you'd expect from a seaside restaurant alongside butter potatoes and fresh greens, but you can have it fresh on the table in less than half an hour and with just a few steps. Easy Baked Cod brings your fish night to new and exciting places from coast to coast!
Ingredients
- 1/4 cup flour
- 1 teaspoon kosher salt
- 1/2 teaspoon coarse ground black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 2 large eggs
- 1 cup bread crumbs
- 1 cup panko bread crumbs
- 1 pound cod fillets, cut into 4 pieces
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Mix the flour, salt, pepper, paprika, and garlic powder in a shallow bowl.
Step 3 -Beat the eggs in a second bowl.
Step 4 -Mix the breadcrumbs and panko together in a third bowl.
Step 5 -Coat the fish in the flour mixture, then in the eggs, and then in the breadcrumbs.
Step 6 -Place the coated fish on a baking sheet.
Step 7 -Spray the fish with vegetable oil spray.
Step 8 -Bake the fish until browned, about 12-15 minutes.
Step 9 -Serve.
