Egg Drop Soup is more than just an appetizer; it’s an enchanting dish with clouds of wispy, savory eggs swimming tantalizingly through the warm broth. With plenty of crunchy green onions, Egg Drop Soup is perfect when paired with stir-fry or fried rice. Best of all, it only takes 15 minutes to make a bowl of this warming broth.
Ingredients
- 3 cups chicken broth
- 1 tablespoon cornstarch
- 2 tablespoons water, cold
- 1 large egg, lightly beaten
- 1 green onion, sliced
Directions
Step 1 -In a large saucepan, bring the broth to a boil over medium heat.
Step 2 -Combine the cornstarch and water until a smooth slurry forms.
Step 3 -Gradually stir the slurry into the broth.
Step 4 -Bring the broth mixture to a boil.
Step 5 -Cook and stir until thickened, about 2 minutes.
Step 6 -Reduce the heat to low.
Step 7 -Drizzle the beaten egg into the hot broth, stirring constantly.
Step 8 -Remove the soup from the heat.
Step 9 -Stir in the onion.
Step 10 -Serve hot!
