Ingredients
- For the dressing:
- 3/4 cup light olive oil
- 1/3 cup fresh lemon juice
- 2 cloves garlic, minced
- 1 teaspoon Dijon mustard
- 1 1/2 teaspoons honey
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- For the salad:
- 1 cup almonds, slivered
- 10 slices bacon
- 3 large romaine hearts, chopped into bite-size pieces
- 1 pint grape tomatoes, halved
- 1 cup Swiss cheese, shredded
- 1/2 cup parmesan cheese, finely shredded
- 1 1/2 cups croutons
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Line a baking sheet with parchment paper and line a 13x18-inch rimmed baking sheet with aluminum foil.
Step 3 -In a glass jar, add the olive oil, the lemon juice, the garlic, the Dijon mustard, the honey, the salt, and the pepper, cover with a lid, and shake to blend.
Step 4 -Transfer the lemon dressing to the refrigerator to chill.
Step 5 -Evenly spread the almonds on the prepared baking sheet and bake, tossing once halfway through, until they are just lightly golden-brown, about 6-10 minutes,
Step 6 -Let the almonds cool.
Step 7 -Increase the oven temperature to 400 degrees F.
Step 8 -On the prepared rimmed baking sheet, add the bacon strips in an even layer and bake until they are browned and nearly crisp, about 13-18 minutes.
Step 9 -Allow the bacon to cool, then crumble into small pieces.
Step 10 -Add the romaine hearts, the toasted almonds, the crumbled bacon, the tomatoes, the Swiss cheese, and the parmesan cheese to a large bowl.
Step 11 -Shake the dressing, pour it over the salad, and toss to combine.
Step 12 -Add the croutons to the salad and toss to coat.
Step 13 -Plate and serve.
