Ingredients
- 1/4 cup gluten-free flour
- 2 eggs
- 2 tablespoons water
- 2 cups gluten-free breadcrumbs
- salt, to taste
- 6 sticks mozzarella string cheese, each cut into 6 pieces
- canola oil, to taste
- marinara sauce, to taste, store-bought or homemade, warmed, for serving
Directions
Step 1 -In a medium shallow bowl, add the flour.
Step 2 -In a second medium shallow bowl, add the eggs and the water and whisk to combine.
Step 3 -In a third medium shallow bowl, add the breadcrumbs and the salt and stir to combine.
Step 4 -In batches with a fork, add 4 pieces of the mozzarella bites at a time, roll in the flour, tapping off any excess, then add to the egg-water mixture and coat well.
Step 5 -Transfer the coated bites to the breadcrumb-salt mixture and, using your hands, coat each of the bites.
Step 6 -Add the bites back to the egg-water mixture and, using a fork, coat well and then transfer the bites back to the breadcrumb-salt mixture and coat to create a double coating.
Step 7 -On a large platter, add the coated bites and repeat the coating process with the remaining bites.
Step 8 -Transfer the coated bites to the refrigerator and let them chill until the breading is set, about 20 minutes.
Step 9 -In a medium, heavy-bottomed pan over medium heat, add enough of the canola oil to come 2-inches up the sides and heat to 365-370 degrees F.
Step 10 -In batches, fry the mozzarella bites in the heated canola oil until golden-brown, about 30 seconds, being careful not to overcrowd the pan.
Step 11 -With a slotted spoon, place the fried mozzarella bites on a paper-towel-lined plate, and let them drain.
Step 12 -Evenly sprinkle the fried mozzarella bites with the salt.
Step 13 -Immediately serve with the warm marinara sauce.
