Ingredients

  • 2 cups all-purpose flour, plus more, to taste, for dusting the pan
  • 1 cup vegetable oil
  • 2 eggs
  • 2 cups white sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 cups apples, peeled and cored, diced

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Grease a 9x13-inch cake pan, and then, using the extra flour, lightly dust the pan, tapping out the excess.

Step 3 -In a mixing bowl, add the oil and the eggs and use an electric hand mixer to beat until creamy.

Step 4 -Add the sugar and the vanilla extract to the egg mixture and beat well.

Step 5 -In another bowl, stir 2 cups of the flour, the cinnamon, the baking soda, and the salt together.

Step 6 -Slowly add the flour mixture to the egg mixture, mixing until combined. The batter will be very thick.

Step 7 -Fold the apples into the batter using a wooden spoon.

Step 8 -Spread the batter in the prepared cake pan.

Step 9 -Bake the cake until a toothpick inserted into the center comes out clean, about 45 minutes.

Step 10 -Let the cake cool on a wire rack.

Step 11 -Slice and serve.
