A new year is here and it's time to get started on your personal resolutions. What is it that you want to accomplish? Well, whatever it is, Get-It-All Fish will be there for you, encouraging you and fueling you up to be the best version of yourself! This tender, flavorful fillet gets a nice coat of a sweet and spicy sauce that will really get your senses tingling and your brain going. The best part is it's baked in the oven, so you have almost 25 free minutes to get started on all those goals you have! Get ready to have it all this year thanks to the help of Get-It-All Fish!
Ingredients
- 17 pineapple rings, fresh or canned
- 1 (3-pound) large salmon fillet
- kosher salt, to taste
- ground black pepper, to taste
- 3 tablespoons butter, melted
- 3 tablespoons sweet chili sauce
- 2 tablespoons cilantro, freshly chopped
- 3 cloves garlic, minced
- 2 teaspoons ginger, freshly grated
- 2 teaspoons toasted sesame oil
- 1/2 teaspoon crushed red pepper flakes
- toasted sesame seeds, to taste
- green onions, to taste, thinly sliced
- lime wedges, to taste, for serving
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Line a large rimmed baking sheet with foil and coat it with cooking spray.
Step 3 -In the center of the foil, lay the pineapple slices in an even layer.
Step 4 -Season both sides of the salmon with the salt and the pepper.
Step 5 -Place the seasoned salmon on top of the pineapple slices.
Step 6 -In a small bowl, whisk the butter, the chili sauce, the cilantro, the garlic, the ginger, the sesame oil, and the red pepper flakes together.
Step 7 -Brush the sauce mixture all over the salmon fillet.
Step 8 -Bake until the salmon is cooked through and its temperature reads 125 degrees F internally, about 25 minutes.
Step 9 -Switch the oven to broil and broil until the fish is slightly golden, about 2 minutes.
Step 10 -Garnish with the sesame seeds and the green onions.
Step 11 -Serve the salmon with the lime wedges.
