Ingredients
- For the brine:
- 1/4 cup kosher salt
- 1/4 cup brown sugar
- 2 tablespoons fresh ginger, minced
- 2 tablespoons freshly ground black pepper
- 1 tablespoon cinnamon
- 3 cloves garlic, minced
- 4 cups water
- 1 turkey breast, skinless, deboned and cut in half
- For the glaze:
- 3 tablespoons honey
- 1 chipotle chile in adobo sauce, minced
- 2 tablespoons Dijon mustard
- 2 tablespoons balsamic vinegar
Directions
Step 1 -In a bowl, combine the salt, the brown sugar, the ginger, the black pepper, the cinnamon, the garlic, and the water.
Step 2 -Pour the brine into a plastic resealable bag.
Step 3 -Add the turkey breasts to the bag and massage until all of the meat is coated in the brine.
Step 4 -Allow the turkey to brine in the refrigerator for at least 8 hours and overnight.
Step 5 -In a small bowl add the honey, the chipotle chiles, the Dijon mustard, and the vinegar and whisk until combined. Set it aside.
Step 6 -Set the grill to medium heat if you are using a grill. If you are using a charcoal grill, use a grill thermometer to maintain the heat at 350 degrees F.
Step 7 -Transfer the turkey from the refrigerator and discard the brine.
Step 8 -Pat the turkey halves dry and brush them evenly with some of the glaze.
Step 9 -Place the glazed turkey halves onto the grill and cook them for 25-30 minutes, turning once. Continually baste both sides of the turkey with some of the glaze during the cooking process, letting it caramelize before adding another layer of the glaze.
Step 10 -Cook until the turkey halves reach an internal temperature of 165 degrees F.
Step 11 -Transfer the turkey halves to a plate and let them rest for 5-10 minutes.
Step 12 -Slice and serve!
