Grilled vegetables are the ultimate spring and summer side, perfect for celebrating the sunshine of the season! Grilled Zucchini embraces this trend with its natural sweetness and garden flavor, accented with olive oil, vinegar, and seasonings. Grilled to tender wonderfulness, Grilled Zucchini makes the vegetable side as appealing as the main course! Plus, it takes less than 30 minutes to make!
Ingredients
- 2 (8-ounce) medium zucchinis, sliced 1/4-inch-thick
- 1 tablespoon extra-virgin olive oil, plus more, to taste, for greasing the grill
- 1 tablespoon red wine vinegar
- 1 teaspoon dried parsley
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- kosher salt, to taste
- freshly ground black pepper, to taste
Directions
Step 1 -Preheat the grill to medium-high.
Step 2 -Toss the zucchini in a bowl with the olive oil, the red wine vinegar, the parsley, the basil, and the garlic powder.
Step 3 -Lay the zucchini on a plate or cutting board, and season it with the salt and the pepper.
Step 4 -Once the grill is hot, carefully grease the grates with the olive oil.
Step 5 -Use tongs to place the zucchini on the grill. Cover and cook for 2-3 minutes. Flip and repeat with the other side.
Step 6 -Once tender, remove the zucchini and add more of the salt and more of the pepper.
Step 7 -Serve immediately!
