Guilt-Free Texas Sheet Cake? Um... how? How is that possible? Well, it turns out all it takes is a few clever substitutions! Using applesauce, whole-wheat flour, and Greek yogurt to replace the heavier ingredients means that the tender chocolatey cake is in fact better for you and your body! Don't worry, the frosting is just as creamy and sweet as ever! So, stop worrying and get into the sweet spirit with Guilt-Free Texas Sheet Cake!
Ingredients
- For the cake:
- 1/2 cup butter
- 1 cup water
- 1/3 cup unsweetened cocoa powder
- 2 eggs
- 3/4 cup Greek yogurt
- 1/2 cup unsweetened applesauce
- 1 cup whole-wheat flour
- 1 cup all-purpose white flour
- 1 1/2 cups sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- For the chocolate frosting:
- 1/2 cup butter
- 1/3 cup unsweetened cocoa powder
- 6 tablespoons milk
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -In a medium microwave-safe bowl, add 1/2 cup of the butter, the water, and 1/3 cup of the cocoa powder.
Step 3 -Cook the butter mixture in the microwave until smooth, 30 seconds at a time.
Step 4 -In a medium bowl, combine the eggs, the yogurt, and the applesauce and whisk until smooth.
Step 5 -In a large bowl, combine the whole-wheat flour, the all-purpose flour, the sugar, the baking soda, and the salt and whisk together.
Step 6 -Add the warm chocolate mixture to the flour mixture and stir to combine.
Step 7 -Add the yogurt mixture to the flour mixture and stir until combined. It's okay if the batter has a few lumps.
Step 8 -Pour the batter in a 13x18-inch jelly roll pan or two 9x13-inch baking sheets.
Step 9 -Bake until a toothpick inserted in the center comes out clean, about 20 minutes.
Step 10 -While the cake is cooling, in a microwave-safe bowl, melt the remaining butter.
Step 11 -Add the remaining cocoa to the butter mixture and whisk until smooth.
Step 12 -Whisk the milk, vanilla, and the powdered sugar into the cocoa mixture.
Step 13 -Pour the frosting over the cooled cake, frosting the edges, and allow the icing to set.
Step 14 -Slice and serve.
