Ready to fire up the grill? Hawaiian Chicken Kebabs are ready to get served up for summertime. Tender chicken is coated in a homemade sweet-and-savory marinade with bright citrus notes and vinegar tang. The delicious chicken is then threaded through kebab sticks along with juicy pineapple and crunchy onion and pepper. Hawaiian Chicken Kebabs contain unmatched tropical flavors, and they are the perfect dinner for a warm summer night!
Ingredients
- For the marinade:
- 1/3 cup ketchup
- 1/4 cup honey
- 1/3 cup low-sodium soy sauce
- 1/4 cup orange or pineapple juice
- 2 tablespoons olive oil
- 1 1/2 tablespoons rice vinegar
- 3 cloves garlic, minced
- 1 teaspoon sesame oil
- salt, to taste
- ground black pepper, to taste
- For the kebabs:
- 1 3/4 pounds chicken breast, boneless and skinless, chopped into 1 1/4-inch cubes
- 3 cups pineapple, cubed
- 1 1/2 large red peppers, cubed
- 1 large red onion, cubed
- 2 tablespoons olive oil, plus more, to taste, for oiling the grill grates
Directions
Step 1 -In a large mixing bowl, combine the ketchup, the honey, the soy sauce, the juice, 2 tablespoons of the olive oil, the rice vinegar, the garlic, the sesame oil, the salt, and the pepper, whisking until well-combined.
Step 2 -Place the chicken pieces into a large resealable bag or in an air-tight container.
Step 3 -Reserve 1/2 cup of the marinade and pour the rest over the chicken pieces in the resealable bag.
Step 4 -Seal the bag and gently massage the chicken pieces until evenly coated.
Step 5 -Refrigerate and let the chicken pieces marinate for at least 1 hour.
Step 6 -Drizzle the remaining 2 tablespoons of the olive oil over the pineapple, the red peppers, and the red onions.
Step 7 -Season the pineapple mixture with the salt and the pepper, tossing until well-coated.
Step 8 -Thread the marinated chicken pieces, the cubed pineapple, the red peppers, and the onions onto the skewers.
Step 9 -Brush the grill with the extra olive oil and preheat over medium-high heat.
Step 10 -Place the skewers onto the grill.
Step 11 -Brush the skewers with the reserved marinade mixture and grill for 5 minutes.
Step 12 -Flip the skewers and brush with the marinade.
Step 13 -Cook until the chicken is cooked through at 165 degrees F, about 5-7 minutes.
Step 14 -Serve warm.
