We know... adding the "healthy" label to Healthy Turkey Meatloaf makes you skeptical. Well, don't worry. Just because this tender loaf is a little better for your heart doesn't mean it's lacking in flavor. In fact, you should expect the opposite! It is full of zesty, sweet, and tangy flavors and comes out of the oven perfectly moist. The sriracha glaze adds a little kick that makes the traditional version look quite bland. If you ask us, Healthy Turkey Meatloaf is the new and improved version... that just so happens to be better for you, too!
Ingredients
- For the meatloaf:
- 1 pound ground turkey
- 1 onion, finely chopped
- 1 large egg
- 3 cloves garlic, finely chopped
- 3/4 cup breadcrumbs, plus more, to taste
- 3 tablespoons soy sauce
- 2 tablespoons ketchup
- 2 tablespoons spicy brown mustard
- 1 tablespoon rice vinegar
- 1 tablespoon Worcestershire sauce
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- 1 teaspoon cayenne
- kosher salt, to taste
- freshly ground black pepper, to taste
- For the sriracha glaze:
- 1/4 cup ketchup
- 2 tablespoons apple cider vinegar
- 1 tablespoon sriracha sauce
- 1 teaspoon ground cumin
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Line a rimmed baking sheet with foil.
Step 3 -In a large bowl, add the ground turkey, the onions, the egg, the garlic, 3/4 cup of the breadcrumbs, the soy sauce, 2 tablespoons of the ketchup, the brown mustard, the rice vinegar, the Worcestershire sauce, the coriander, 2 teaspoons of the cumin, the cayenne, the salt, and the pepper and mix until they are just combined. If the mixture feels too wet, add the extra breadcrumbs until it reaches the desired consistency.
Step 4 -Add the turkey mixture to the prepared baking sheet and form it into a loaf.
Step 5 -In a small bowl, add the remaining ketchup, the apple cider vinegar, the sriracha sauce, and the remaining cumin and mix until they are well-combined.
Step 6 -Brush about 1/3 of the sriracha glaze all over the loaf.
Step 7 -Bake the meatloaf, basting it occasionally all over with 1/2 of the remaining sriracha glaze, until it reaches an internal temperature of 170 degrees F, about 35-45 minutes.
Step 8 -Coat the meatloaf all over with the remaining sriracha glaze, then slice it into serving-size pieces.
Step 9 -Serve.
