Especially when they're smothered with just the right about of melted butter and your favorite sugary jam. They offer so many delicious possibilities that you must experience, too... like using them to soak up your go-to soup or sandwiching your beloved breakfast protein of choice in the middle. So, make your own batch of these Homemade Amish Biscuits and see for yourself!
Ingredients
- 2 1/4 cups all-purpose flour, plus more, to taste
- 2 1/4 cups cake flour
- 1 1/2 teaspoons salt
- 1 1/2 tablespoons baking powder
- 1 teaspoon baking soda
- 1 cup very cold butter, plus 2 tablespoons melted butter, divided
- 2 cups buttermilk
Directions
Step 1 -Preheat the oven to 475 degrees F.
Step 2 -In a bowl, combine 2 1/4 cups of the all-purpose flour, the cake flour, the salt, the baking powder, and the baking soda together.
Step 3 -Cut 1 cup of the cold butter into the flour mixture until it is crumbly and the butter chunks can be felt when touching the mixture. Be sure not to overmix.
Step 4 -Add the buttermilk to the dough mixture and mix until the dough is slightly sticky and just combined.
Step 5 -Turn the dough onto a floured pastry mat and pat it into a horizontal 1-1/2-inch-thick rectangle.
Step 6 -Fold the left side of the rectangle dough over the right side and pat it out into a vertical rectangle.
Step 7 -Fold the bottom half of the dough up to the top and press it out into a horizontal rectangle.
Step 8 -Repeat the folding process three times for a total of six folds. Be careful not to overwork the dough while folding. If the dough gets too sticky, sprinkle with the extra all-purpose flour.
Step 9 -Gently pat the folded dough into a 1-inch-thick rectangle.
Step 10 -Use a sharp biscuit cutter to press down through the dough and lift up. Do not twist or shuffle the cutter around.
Step 11 -Place the dough pieces on a silicone baking mat and brush with the remaining melted butter.
Step 12 -Bake the biscuits for 5 minutes.
Step 13 -Reduce the heat to 425 degrees F, without opening the oven, and bake the biscuits until they are warm and fluffy, about 8-10 minutes.
Step 14 -Let the biscuits rest, about 2-3 minutes.
Step 15 -Serve the biscuits warm.
