Apparently, Broadway and Hollywood superstar Hugh Jackman is a huge fan of carbs when he allows himself a cheat day! We can all relate to that! So, what better way to celebrate this talented man than with a personal favorite of his: Hugh Jackman's Favorite Pudding! This is a bread pudding, using white bread and fruity raisins as the base for a delicious creamy custard. Rich butter drizzled on top and brushed on after baking ensures no bite goes without indulgence. And of course, Hugh Jackman's Favorite Pudding wouldn't be complete unless served with ice cream or drizzled with a luxurious dessert sauce. We should see what else Mr. Jackman has up his sleeve when it comes to desserts!
Ingredients
- For the custard:
- 3 eggs
- 1 1/2 cups milk, not skim
- 1 cup heavy cream
- 3 tablespoons unsalted butter, melted and cooled
- 1/2 cup white sugar
- 1 teaspoon cinnamon powder
- 1 teaspoon vanilla extract
- For the bread filling:
- 8 heaping cups white bread, preferably slightly stale, cut into 1-inch cubes
- 1 cup raisins, or more or less to taste
- 2 tablespoons unsalted butter, melted
- For serving:
- 1 1/2 tablespoons unsalted butter, melted, optional
- powdered sugar, optional, to taste
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Place the eggs in a large bowl and whisk briefly.
Step 3 -Whisk the milk, the heavy cream, 3 tablespoons of the melted and cooled butter, the white sugar, the cinnamon powder, and the vanilla extract into the egg mixture.
Step 4 -Add the bread and the raisins to the custard mixture, briefly mixing, and allow the custard to soak into the bread, about 3 minutes.
Step 5 -Pour the bread mixture into a 2 1/2-quart baking dish, poking any raisins that are peeking out back under the surface of the custard and bread.
Step 6 -Drizzle the pudding with 2 tablespoons of the melted butter.
Step 7 -Bake until the top is golden and the inside is set but slightly wobbly, about 25-30 minutes. Carefully poke it to check for the wobble.
Step 8 -Brush the pudding with the remaining melted butter.
Step 9 -Dust the pudding with the powdered sugar.
Step 10 -Serve.
