Jackie Kennedy Antipasto Salad is a picnic favorite absolutely suitable for enjoying on the White House lawn! The tender spiral pasta, the bright tomatoes, the crisp lettuce, the simple yet effectively tangy dressing... it all comes together for a pasta salad that is more than the sum of its parts! In fact, it's even better than that! Jackie Kennedy Antipasto Salad is fashionable fare for friendly diplomats and friends alike!
Ingredients
- 8 ounces spiral pasta, such as rotini
- 1 cup cherry tomatoes, halved
- 1/4 medium red onion, finely diced
- 2 cups romaine lettuce, chopped
- 1/4 cup fresh basil, chopped
- 1 jarred roasted red pepper, thinly sliced
- 1 cup olives, green and black, pitted
- 1 cup canned artichoke quarters, drained
- 1/2 cup pepperoncinis, drained and sliced
- 8 ounces mozzarella, fresh, cubed, or marinated, shredded if not cubed
- 2 tablespoons white wine vinegar
- 1 tablespoon Dijon mustard
- 2 teaspoons sugar, can substitute maple syrup
- 6 tablespoons olive oil
- 1 teaspoon kosher salt, plus more, to taste
- 1 tablespoon Italian seasoning
Directions
Step 1 -In a large pot of salted, boiling water, cook the pasta until al dente, according to the package directions.
Step 2 -In a large bowl, add the cooked pasta, the tomatoes, the red onions, the romaine, the basil, the red pepper, the olives, the artichokes, and the pepperoncinis and gently stir to combine.
Step 3 -Add the mozzarella to the salad mixture.
Step 4 -In a small bowl, add the vinegar, the Dijon mustard, and the sugar.
Step 5 -Slowly add the oil to the vinegar mixture, while whisking constantly.
Step 6 -Add the dressing, 1 teaspoon of the salt, and the Italian seasoning to the salad mixture and stir to combine.
Step 7 -Taste the salad for seasoning and add the extra salt, as needed.
Step 8 -Serve.
