Light Chicken Salad whipped up in just 10 minutes so you don’t have to worry about what to eat when you’re trying to embrace a healthier lifestyle.
Ingredients
- 3/4 pound chicken breasts, cooked, skinless, boneless, and cut into bite-sized pieces
- 1/2 cup celery, raw and finely diced
- 1/3 cup unsweetened dill pickles or sweet gherkins, finely diced
- 1/4 cup reduced-calorie mayonnaise
- 2 tablespoons reduced-fat sour cream
- 2 tablespoons parsley, chopped
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1/2 teaspoon table salt
- 1/4 teaspoon ground black pepper
- bread, optional, of your choice, for serving
- lettuce, optional, to taste, for serving
Directions
Step 1 -Combine the chicken, celery, pickles, mayonnaise, sour cream, parsley, Dijon mustard, lemon juice, salt, and pepper in a large bowl.
Step 2 -Serve on your choice of bread or a bed of lettuce.
