How do you make mac and cheese healthy? Seems like an impossibility. And yet Lighter Mac and Cheese makes it so! Simply by using less cheese, less salt, and nourishing whole-wheat pasta, it's entirely possible to enjoy the stretchy, creamy taste of Lighter Mac and Cheese without any guilt! You don't even miss out on the cheese flavor! It's all good with this dish on the table, for your tastebuds and your waistline!
Ingredients
- 3 cups low-sodium vegetable or chicken broth
- 1 cup whole milk
- 2 tablespoons salted butter
- 1/4 teaspoon garlic powder
- 1/4 teaspoon mustard
- 3/4 teaspoon salt
- ground black pepper, to taste
- 3 cups whole-wheat elbow macaroni, uncooked
- 1 cup marble or cheddar cheese, shredded
- 1/4 cup parmesan cheese, shredded
Directions
Step 1 -In a medium pot over medium heat, add the broth, the milk, the butter, the garlic powder, the mustard, the salt, and the ground black pepper and bring to a boil.
Step 2 -Add the macaroni to the broth mixture and cook, stirring every few minutes, until al dente, about 8-10 minutes.
Step 3 -Turn the stovetop heat off and add the marble cheese and the parmesan cheese in portions, stirring in between each addition, until melted.
Step 4 -Serve immediately.
