There are a lot of ways to fix your favorite dish, but there's really only one way to make Pansy's Scalloped Potatoes and achieve the fullest flavor of your friendly spuds. Thinly sliced Yukon Gold potatoes are layered in a creamy, sharp cheese sauce and baked until tender, golden potato perfection! Pansy's Scalloped Potatoes are the very best addition to any meal that becomes a family fave in just one bite! They're so golden!
Ingredients
- 3 tablespoons butter
- 3 tablespoons flour
- 1 1/2 cups milk
- 1 teaspoon salt
- cayenne pepper, to taste
- 1 1/2 cups sharp cheddar cheese, grated, divided
- 4 cups Yukon Gold or russet potatoes, thinly sliced
- paprika, to taste
- chives, to taste, chopped, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 1 1/2-quart baking dish.
Step 3 -In a small saucepan, melt the butter, then stir in the flour.
Step 4 -Slowly whisk the milk into the butter-flour mixture and season with the salt and the cayenne.
Step 5 -Cook the sauce on medium-low heat, whisking occasionally, until it is smooth and boiling.
Step 6 -Reduce the heat to low and stir 1 cup of the cheese into the sauce.
Step 7 -Place 1/2 of the sliced potatoes in the baking dish, then cover with 1/2 of the cheese sauce. Repeat the layers once.
Step 8 -Sprinkle the potatoes with the remaining cheese and the paprika.
Step 9 -Bake the scalloped potatoes until they are fork-tender, about 45-50 minutes.
Step 10 -Serve the scalloped potatoes garnished with the chives.
