Patchwork Quilt Cake is as classic and beloved as the blanket Grandma knitted for you! The cake is moist, tender, and fluffy, and the frosting is sweet and creamy, fulfilling all your dessert dreams. But the patchwork comes from the summery and vibrant berry topping, arranged to resemble the patches of a homemade quilt. Patchwork Quilt Cake feels as authentic and rustic as it tastes, and is sure to bring a little color to your next cookout!
Ingredients
- For the cake:
- 2/3 cup butter, softened
- 1 3/4 cups sugar
- 1 tablespoon vanilla extract
- 2 large eggs, room temperature
- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/4 cups milk, 2%
- For the frosting:
- 1 cup butter, softened
- 3 cups confectioners' sugar
- 4 teaspoons vanilla extract
- 3 tablespoons heavy whipping cream, plus more as needed
- fresh berries, of your choice, to taste
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9x13-inch baking dish.
Step 3 -Cream 2/3 cup of the butter and sugar until light and fluffy, about 5-7 minutes.
Step 4 -Add 1 tablespoon of the vanilla and the eggs, one at a time, and beat well after each addition.
Step 5 -In a separate bowl, whisk together the flour, baking powder, and salt.
Step 6 -Beat the dry ingredients mixture and the milk into the creamed mixture, alternating between the two and mixing well after each addition.
Step 7 -Transfer the batter to the prepared dish.
Step 8 -Bake until a toothpick inserted into the center comes out clean, about 40-45 minutes.
Step 9 -Place the baking dish on a wire rack and allow the cake to cool completely.
Step 10 -Beat the remaining butter until creamy.
Step 11 -Gradually beat in the confectioners' sugar until smooth and light in color, about 3 minutes.
Step 12 -Beat in the remaining vanilla and 3 tablespoons of the cream until light and fluffy, about 2 minutes. Thin the frosting with up to 1 more tablespoon of the cream as desired.
Step 13 -Spread the frosting over the cooled cake.
Step 14 -Top the cake with the berries in a patchwork quilt pattern.
Step 15 -Slice and serve.
