The key to Perfectly Grilled Steak is preparation. Following the right steps to ensure the steaks cook evenly and fully to the perfection of juicy texture both takes and rewards patience. Once you know what you need to do, every steak you make comes off the grill sizzling and savory, with just a few spices to enhance the beefy flavor. Perfectly Grilled Steak demonstrates restaurant techniques and tastes in the comfort of your own home.
Ingredients
- 4 steaks, of your preferred cut i.e (1/4-1 1/2 inch-thick) boneless rib-eye, (12 ounce) New York strip steaks, or (8-10 ounce) filet mignon, trimmed
- 2 tablespoons canola or extra-virgin olive oil, to taste
- kosher salt, to taste
- ground pepper, to taste
Directions
Step 1 -Remove the steaks from the refrigerator 30 minutes before grilling.
Step 2 -Let sit, covered, at room temperature. Allow the steaks to reach almost room temperature. This will ensure that the steaks are evenly cooked throughout and prevent drying.
Step 3 -Preheat the grill to medium-high.
Step 4 -Brush the steaks with the oil on both sides.
Step 5 -Season liberally with salt and pepper.
Step 6 -Place the steaks on the grill, and cook until golden brown and slightly charred, about 3-5 minutes.
Step 7 -Turn the steaks over, and continue to grill until it reaches its desired doneness, about 3-5 minutes for medium-rare (an internal temperature of 135 degrees F), 5-7 minutes for medium (140 degrees F), or 8-10 minutes for medium-well (150 degrees F). Use a meat thermometer to ensure that the meat has reached a proper internal temperature.
Step 8 -Once the steaks have been cooked to your desired doneness, place them on a cutting board or plate.
Step 9 -Cover the steaks loosely with butcher paper or aluminum foil, and let rest for at least 5 minutes before serving.
Step 10 -Serve. If slicing, slice against the grain.
