Break open a new party-in-a-dish dinner tradition that has a little of everything that you love in a Mexican bake. Piñata Casserole grabs you from the first bite and definitely hits the spot! Take a swing at a fun casserole that has layers of saucy chicken, crunchy tortilla chips, loads of melted cheese, a sprinkling of juicy tomatoes, and some zippy jalapeños. Donkeys and candy aside, the Piñata Casserole is sure to become the center of attention at your next dinner celebration. In fact, it's sure to be a hit!
Ingredients
- 2 tablespoons vegetable oil
- 1 medium yellow onion, chopped
- 1 small jalapeño, deveined and deseeded, finely chopped, plus more, to taste, thinly sliced, for garnish
- 2 cloves garlic, finely chopped
- 3 cups rotisserie chicken, shredded
- 1 (15.5-ounce) can black beans, rinsed and drained
- 1 (15.25-ounce) can corn, drained
- 1 1/2 teaspoons kosher salt
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon freshly ground black pepper
- 1 (15-ounce) can fire-roasted tomatoes
- 1 (10.5-ounce) can condensed cream of chicken soup
- 2 cups tortilla chips, crushed
- 1 1/2 cups cheddar cheese, shredded
- 1 1/2 cups Monterey Jack cheese, shredded
- cherry tomatoes, to taste, sliced, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9x13-inch baking dish.
Step 3 -In a large skillet over medium heat, add the vegetable oil.
Step 4 -Add the onions to the heated vegetable oil and cook, stirring occasionally, until they are slightly tender and just turning golden, about 5 minutes.
Step 5 -Add 1 of the chopped jalapeños and the garlic to the onions and cook, stirring occasionally, until they are fragrant, about 1 minute.
Step 6 -Add the shredded chicken, the black beans, the corn, the salt, the chili powder, the cumin, and the black pepper to the jalapeño mixture and cook, stirring occasionally, until the chicken is warmed through, about 5 minutes.
Step 7 -Add the fire-roasted tomatoes and their juices and the cream of chicken soup to the chicken mixture and stir to combine.
Step 8 -Pour 1/2 of the chicken mixture into the prepared baking dish.
Step 9 -Top the chicken mixture with 1/2 of the tortilla chips, 1/2 of the cheddar cheese, and 1/2 of the Monterey Jack cheese.
Step 10 -Repeat the layers once, starting with the chicken mixture and ending with the Monterey Jack cheese.
Step 11 -Bake the casserole until it is bubbly and the cheese has melted, about 25-30 minutes.
Step 12 -Garnish the casserole with the extra jalapeños and the cherry tomatoes and serve.
