There's only smooth sailing ahead with these little sweeties at the helm! Rocky Road Cookies are a chocolate-lovers dream, all topped with fluffy and melty mini marshmallows, crunchy almond slivers, and rich semisweet chocolate chips! Better yet, they can be whipped up with no trouble at all, ready to feed your hangry crew on a whim. Rocky Road Cookies are such a smooth operator and an outstanding dessert!
Ingredients
- 1 1/2 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup semisweet chocolate chips, plus more, to taste
- 1 stick unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- mini marshmallows, to taste
- 1/2 cup almonds, sliced, broken into smaller pieces, plus more, to taste
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Line an 18x26-inch baking sheet with a silicone mat.
Step 3 -In a large bowl, add the flour, the cocoa powder, the baking soda, the salt, and 1/2 cup of the chocolate chips and stir to combine.
Step 4 -In a separate large bowl, add the butter, the granulated sugar, and the brown sugar and using an electric hand mixer on low speed, beat to combine.
Step 5 -Add the egg and the vanilla extract to the butter mixture and beat to combine.
Step 6 -Gently add the flour mixture to the butter mixture, either by hand or using the electric hand mixer, and mix until just combined.
Step 7 -In a single layer about 3 inches apart, use a cookie scoop to drop the cookie dough mixture onto the prepared baking sheet, working in batches if needed.
Step 8 -Gently press the mini marshmallows, the extra almond pieces, and the extra chocolate chips into the exteriors of each of the dough balls. Note: If you're working in batches, be sure to reserve some of the toppings any remaining batches.
Step 9 -Bake until just set, about 10-13 minutes.
Step 10 -Transfer the baking sheet from the oven to a wire rack and let the cookies cool on the pan, about 10 minutes.
Step 11 -Transfer the cooled cookies directly onto the wire rack and let them cool completely.
Step 12 -Continue this process until all of the cookies are baked and cooled.
Step 13 -Serve.
