You don’t need to be a skilled chef to whip up Skillet Honey Lime Chicken! All you need is half an hour or less and the craving for slightly acidic, slightly sweet chicken! The lime juice and honey beautifully caramelize atop the savory chicken for a flavor you can’t believe! Skillet Honey Lime Chicken can wi nthe taste talent show any day of the week!
Ingredients
- 1/3 cup low-sodium chicken broth, divided
- 1 1/2 teaspoons cornstarch
- 2 teaspoons lime zest
- 1/3 cup fresh lime juice
- 1/4 cup honey
- 1 tablespoon soy sauce
- 4 chicken breasts, boneless and skinless
- salt, to taste
- freshly ground black pepper, to taste
- 1 1/2 tablespoons olive oil
- 1 1/2 tablespoons butter
- 2 cloves garlic, minced
- cooked coconut rice, optional, for serving
Directions
Step 1 -Pour 1 tablespoon of the chicken broth into a small bowl.
Step 2 -Add in the cornstarch using a whisk.
Step 3 -Pour in the remaining chicken broth, as well as the lime zest, lime juice, honey, and soy sauce.
Step 4 -Mix to blend the mixture with a whisk, and set it aside.
Step 5 -Use a meat tenderizer to pound the thicker parts of chicken to an even thickness.
Step 6 -Season each side of the chicken with salt and pepper.
Step 7 -Heat up the olive oil in a large skillet over a medium-high heat.
Step 8 -Cook the chicken until golden brown and cooked through, about 5-6 minutes.
Step 9 -Transfer the chicken to a plate and cover with aluminum foil to keep it warm.
Step 10 -Melt the butter into the same skillet on a medium heat.
Step 11 -Saute the garlic until it is golden and fragrant, around 30 seconds.
Step 12 -Mix the lime juice mixture with a whisk and pour it into the skillet, cooking and stirring until the mixture has reduced slightly, about 2 minutes.
Step 13 -Return the chicken to the skillet, and spoon sauce over the chicken.
Step 14 -Serve over coconut rice!
