Ingredients

  • For the dressing:
  • 1 small Vidalia onion, chopped
  • 1/2 cup light olive oil
  • 3 tablespoons balsamic vinegar, can substitute white balsamic vinegar
  • 1 tablespoon plus 2 teaspoons granulated sugar
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon kosher salt
  • For the salad:
  • 1 head bibb lettuce, washed and leaves roughly torn
  • 1 (16-ounce) carton fresh strawberries, hulled, halved or quartered
  • 1 avocado, diced
  • 4 ounces blue cheese, optional, crumbled

Directions

Step 1 -In a blender, add the onions, the olive oil, the balsamic vinegar, the sugar, the mayonnaise, the mustard, and the salt and cover the blender.

Step 2 -Blend until a smooth and creamy dressing forms, about 50 seconds. Set the dressing aside.

Step 3 -On a large platter, add the lettuce, the strawberries, the avocados, and the blue cheese.

Step 4 -Drizzle the salad with the dressing and serve.
