Whether you have travel plans or not, when the warm weather rolls in, it puts everyone in vacation mode. What is it about those long, sunny days that put us in a trance, longing for an ice-cold drink next to any kind of body of water we can find?! Well, whatever it is, we aren't mad about it... especially when that fruity drink in hand is this Summer Sipper! This tropical, sweet drink is quite a refreshing treat. It sings to you with its hints of tart and syrupy pineapple and passionfruit. It restores and invigorates you thanks to the hint of caffeine brought to you by some green coffee extract. The Summer Sipper is the all-inclusive package you need for the best summer ever! And guess what?! There's no voyaging required!

Ingredients

2 3/4 cups water, divided
1/2 cup granulated sugar
1 cup fresh pineapple, chopped
2 teaspoons passionfruit powder
1/2 teaspoon green coffee extract
1/2 teaspoon citric acid
ice, to taste
1/4 cup freeze-dried pineapple pieces, plus more, to taste, for serving

Directions

Step 1 -In a medium saucepan, add 1 1/4 cups of the water, the sugar, and the fresh pineapple and bring to a boil.

Step 2 -Reduce the heat and simmer the pineapple mixture until it slightly thickens and the pineapple starts to break down, about 15 minutes.

Step 3 -Strain the pineapple mixture into a bowl, pressing down on the pineapples to extract as much of the juice as possible.

Step 4 -Return the pineapple syrup to the saucepan over low heat.

Step 5 -Stir the passionfruit powder, the green coffee extract, and the citric acid into the pineapple syrup until it is mostly combined. The passionfruit powder will likely not fully blend in.

Step 6 -Pour the syrup mixture in a large bowl or mason jar and let it cool completely. The syrup will continue to thicken as it cools.

Step 7 -Add 1 cup of the water to the syrup mixture and mix well to combine.

Step 8 -Add the ice to a drink shaker.

Step 9 -Add the syrup mixture, the remaining water, and 1/4 cup of the freeze-dried pineapple pieces to the ice.

Step 10 -Cover the shaker and shake well to combine.

Step 11 -Pour the drink into a glass and top with the extra freeze-dried pineapple pieces.

Step 12 -Serve.
